What a beautiful and delightful cookbook this is. Gina uses traditional recipes and reduces the calories in a way that you actually do not miss them. She keeps the flavor and the consistency while creating dishes that you do not feel guilty consuming. I was surprised that she included a section on sandwiches and though I don’t necessarily agree with breads she was unconventional and there are some really delicious sandwiches. The roast beef sandwich with creamy horseradish spread is delicious; the Greek salad pita pizzas are great and the pear and brie grilled cheese perfect.
The booke opens with the basics of keeping the calories out with plenty of hints, substitutions and a hint of motivation. There is a chapter on breakfast, one of the more challenging meals of the day that in my opinion has too many carbs, but in all honesty, she does balance it with my favorite Winter potato, Kale and Sausage Frittata. Following are chapters with plenty of dips, appetizers and unique salads balanced with hearty poultry, lean meats and fish. Add meatless meals and veggie sides then top it all off with the final chapter ‘Skinny Sweet Tooth’ with recipes like Double Chocolate Chunk Walnut Cookies and Mini Pavlovas with Fresh Fruit… Oh my!!
