If you love salads and eat salads quite often, it may get just a tad, shall I say, boring? This delightful book has 260 varieties of decidedly healthy salad options. After delving into the recipes in a serious sort of way, and trying out more than a couple, I am pleased with the book. We are taught first how to build a salad from the base to vegetables and fruit to protein options to toppings and fresh herbs and for the pièce de résistance, dressings and herbs. The recipes have options for raw alternatives if there may be prosciutto or shaved parmesan are called for in the original creation, or perhaps an omnivore alternative to a vegan salad. The salads are categorized as raw, vegan, omnivore, pescatarian or vegetarian and the photography is mouthwatering awesome. There are grain salads and green salads and everything in between. A lot went into this book and I now have myself quite a few new delightful creations added to my dinner table. I obtained this book from Bethany House Publishing , and the opinion is my own.
