What an absolute pleasure to have in my possession once again, Molly Katzen’s Moosewood Cookbook. In the 70’s I believe it was, this cookbook was my favorite dog eared recipe collection, held together not so respectably with elastic and duct tape. Where that book with all my notes and ratings in it, went, I will never know. I also owned the Enchanted Broccoli Forest which is a wonderful companion. I am delighted to see that an impressive amount of the same awesome recipes are still in the Moosewood Cookbook, and many have changed to a healthier version. I love the handwritten pages so full of personality and art, and also the well written directions and substitutions. The soups section contains almost every conventional soup recipe known from the Spicy Tomato Soup, to Minestrone, to Succotash Chowder, followed by carrot, squash, bean, borscht, to chilled cucumber and everything in between. Appetizer or full meal, the choice is yours in this impressive list. The subsequent chapters’ sound plain Jane, but don’t let that fool you. The recipes are varied with plenty of wholesome choices to choose from. Sauces and Dips follow behind with a sauce for every need from masala, to broccoli sauce to pestos. Companioned with the sauces are stir-fry, multi gingers, cheese, rarebit, nacho and more. Add vegetable purees and you can feel your arteries unclogging. Molly adds a few sandwiches and ‘baked things’ to a chapter followed logically by Entrees and ending with of course, Desserts. This book is every bit as good as it was in the early years.
